I had a busy week last week. I went from thinking about various topics for this week’s blog post and somehow ended up going for the avo, tomato and feta breakfast toast.
I was planning to just rest all weekend long because I was feeling overwhelmed from all the information I have been consuming about various areas about my life. From Forex trading to blogging, to fitness and even side business ideas.
Fortunately the content and recipes on this platform (Eat Rigt Online) are all about simplicity and eating right without all the complicated steps one has to take to ensure that you form healthy eating habits.
This week’s recipe was really a quick fix and I think it will be the perfect choice for the people who are running late or aren’t that great at cooking.
All that is required for this meal are 4 ingredients and a little bit of time to prepare. It is ideal for that lazy cook who just wants to get a quick fix and get going.
For all the vegans out there looking for a balanced meal, this should do wonders for you because it caters for all your nutrients that are needed to fulfil you for long without making use of animal products.
The one thing I really enjoyed about this meal was the fact that it was not time consuming and didn’t require much hard labour or any cleaning up afterwards.

- 2 Slices of wholewheat Bread
- 1 Avocado
- 2 Slices of tomato
- 1 block of feta cheese
- salt and pepper
- Toast the 2 slices of Bread
- Spread the avocado on the toast
- Place tomatoes on the toast
- Chop the feta into small blocks and sprinkle over the toast
- Add salt and pepper to enhance taste
